American Pie Smoothie (Recipe)

Dessert in a glass. I recommend green-weary kids give this one a go before jumping into something less sweet.

Ingredients

  • 2 green apples
  • 2 cups spinach
  • 1 cup young coconut flesh
  • 1 banana
  • 1 cup coconut water
  • cinnamon and nutmeg to taste

Directions

  1. Add first 3 ingredients [to blender].
  2. Blend until smooth, adding water as necessary.
  3. Add remaining ingredients and blend until desired consistency.
Fresh young coconut is one of the most delicious healthy fats available. Mixed with sweet apples and protein-rich spinach, this is the closest you’ll get to eating something akin to Grandma’s apple pie without passing out after eating.

The banana is not optional in this one; it increases the potassium content of the spinach and adds a creamy pie-like texture that’ll have you coming back for more.
